Aldose 1-epimerase (mutarotases) is a key enzyme of carbohydrate metabolism catalysing the interconversion of the α- and β-anomers of hexose sugars such as glucose and galactose. Aldose 1-epimerase is essential for normal carbohydrate metabolism and the production of complex oligosaccharides[1].
