焦木酸

香料兼防腐剂。用于肉类、鱼类、贝类干制品的增香防腐。一般将肉类等先腌渍并风干后，在含有1%食盐和10%～15%木醋液的冷熏液中浸渍5～10min，取出风干，再在熏室中加热干燥1～2h而成。主要用于熏火腿、洋火腿、香肠(成品实际加量0.2%～0.4%)、鱼肉块、鱼香肠(0.5%～1.0%)、鱼糕和鱼肉卷(0.1%～0.2%)等。按FAO/WHO规定，可用于沙丁鱼罐头、鱼参鱼罐头和盐水火腿等，用量视生产需要而定。
