焦木酸用途香料兼防腐剂。用于肉类、鱼类、贝类干制品的增香防腐。一般将肉类等先腌渍并风干后,在含有1%食盐和10%~15%木醋液的冷熏液中浸渍5~10min,取出风干,再在熏室中加热干燥1~2h而成。主要用于熏火腿、洋火腿、香肠(成品实际加量0.2%~0.4%)、鱼肉块、鱼香肠(0.5%~1.0%)、鱼糕和鱼肉卷(0.1%~0.2%)等。按FAO/WHO规定,可用于沙丁鱼罐头、鱼参鱼罐头和盐水火腿等,用量视生产需要而定。 |
