Anti-caking agents, also known as anti-caking agents, are a type of food additive that prevents powdery or crystalline foods (such as flour, rice flour, and salt) from agglomerating and agglomerating to maintain a free-flowing state. The anti-caking agent has the characteristics of fine particles (2 to 9 μ), large surface area (310 to 675 m 2 /g), high specific volume (80 to 465 kg/m 3 ), and easy adsorption of moisture in foods. Some anti-caking agents have a microporous structure, which can be used to adsorb agglomerated moisture by its high porosity, preventing food from agglomerating and agglomerating. There are currently five kinds of anti-caking agents approved for use in China: potassium ferrocyanide, sodium aluminosilicate, tricalcium phosphate, silica and microcrystalline cellulose. There are many varieties of anti-caking agents. In addition to the five types approved for use in China, aluminum silicate, calcium aluminosilicate, calcium silicate, calcium stearate, magnesium carbonate, magnesium oxide and stearic acid are also permitted in foreign countries. Magnesium, magnesium phosphate, magnesium silicate, kaolin, talc and sodium ferrocyanide. It is mostly used to prevent agglomeration of dairy products such as sucrose powder, glucose powder and milk powder. It can be used alone or in combination with other anti-caking agents, and no starch is present. In addition to anti-caking effect, some have other effects, such as calcium silicate and kaolin also have a filter aid, calcium stearate and magnesium stearate have emulsification. Moreover, except for the ADI value of ferrocyanide, the safety of other varieties is very good, and the ADI values are not required to be specified, and can be appropriately developed as needed. Japan has prescribed D-mannitol as a release agent for gum and sugar products. The anti-caking agent allowed in China is currently only potassium ferrocyanide [K4Fe(CN)6·3H2O], which is used to prevent the agglomeration of salt. The maximum allowable amount is 0.005mg/kg, (based on ferrocyanide) ). Its ADI value is 0 to 0.25 mg/kg. It is a food additive necessary for long-distance transportation and storage of salt.
